Chef’s Profile

Masayoshi Kitagaito

Born in Matsuyama City, Ehime Prefecture.

After graduating from the Culinary Arts Course at Matsuyama Jonan High School (now Matsuyama Gakuin High School), he honed his skills as a Japanese cuisine chef, primarily working in Osaka and Aichi prefectures.

Through his experiences at various workplaces and interactions with a wide range of people, he refined his technical abilities and developed his professional mindset.

He also spent a year working as a tomato farmer, gaining firsthand insight into the challenges of food production and the dedication of the producers.

After accumulating extensive experience in Japanese cuisine and defining his own culinary vision, he opened "Nihon-ryori Yoshiwaka" in his hometown of Matsuyama City, Ehime Prefecture.

He places great importance on engaging with the ingredients at their peak, pouring his heart into every dish, and creating memorable dining experiences for his guests.
